Executive Chef


The Grafton District Services Club (GDSC) is about to embark on a multi-million-dollar refurbishment and we are looking for a talented, passionate and hands on Executive Chef to lead our team in this next phase of the Club’s evolution.

The role involves:

  • Training and mentoring your team.
  • Writing menus, developing new ideas and plans for implementation of quality dishes.
  • Managing your team in relation to wage budgets and cost of goods.
  • Sourcing, working with and negotiating prices with suppliers.
  • Being a core part of the business and ensuring that the culture within each kitchen is positive, compliant and fair.

Essential requirements: 

  • Relevant trade requirements - Qualified Chef – Certificate 3.
  • HACCP Implementation & WHS knowledge.
    • Previous experience in a similar role -
    •  
    • Minimum 3 years in Senior Sous or Head Chef role.
    • Strong proven Leader – previous experience managing a team.
    • Minimum 3 years in Senior Sous or Head Chef Role.
    • Skills is budgets, recipes, menu creation, cost and stock control.
    • Knowledge of contemporary cuisine and current trends.
    • A passion for food with knowledge across a range of cooking styles.
    • Willingness to work a range of shifts across days, evenings and nights including split shifts.
